Ingredients
2 1/4 cups all-purpose flour
2 tablespoons unsweetened natural cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 tablespoon vanilla extract
1 tablespoon red food coloring
8 ounces cream cheese, softened
2 1/2 cups powdered sugar
2 tablespoons milk or heavy cream
Instructions
1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the egg, vanilla extract, and red food coloring, then mix until smooth and evenly combined.
5. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving space between each cookie.
7. Bake for 9 to 11 minutes, until the edges are set and the centers still look slightly soft.
8. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
9. To make the frosting, beat the cream cheese until smooth.
10. Add the powdered sugar gradually, mixing well after each addition.
11. Add the milk or heavy cream a little at a time until the frosting is creamy and spreadable.
12. Frost the completely cooled cookies and serve right away, or chill briefly so the frosting sets.
Notes
Use natural cocoa powder instead of Dutch-process cocoa for the best classic red velvet flavor and color.
Do not overbake the cookies. They should look slightly soft in the center when you take them out so they stay chewy after cooling.
Make sure the cookies are fully cool before frosting them or the cream cheese frosting will melt and slide off.
