Description

These simple roasted potatoes are crispy on the outside, fluffy on the inside, and bursting with flavor from garlic, paprika, and olive oil. The perfect side dish for any meal, this easy roasted potato recipe is gluten-free, budget-friendly, and incredibly satisfying.


Ingredients

2 pounds potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley (optional)


Instructions

1. Preheat your oven to 425°F (220°C) and wash, scrub, and dry your potatoes. Cut them into 1-inch chunks.

2. Place the potatoes in a large bowl and toss with olive oil. Sprinkle garlic powder, paprika, salt, and pepper over them. Toss again to coat evenly.

3. Arrange the seasoned potatoes on a parchment-lined baking sheet in a single layer.

4. Roast in the oven for 35–40 minutes, flipping halfway through, until golden and crispy.

5. Remove from oven, sprinkle with fresh parsley if using, and serve hot.

Notes

Use Yukon Gold or red potatoes for a creamy center.

Cut potatoes evenly to ensure even roasting.
