Ingredients
3 pounds chuck roast
4 cups beef broth
1 large onion, sliced
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 bay leaf
6 slices provolone cheese
6 hoagie rolls
Instructions
1. Season the chuck roast with salt and pepper, then sear in a hot skillet until browned on all sides.
2. Place the sliced onion and minced garlic in the bottom of the slow cooker.
3. Pour in the beef broth, Worcestershire sauce, soy sauce, and add the bay leaf.
4. Add the seared roast to the slow cooker, cover, and cook on low for 8 hours.
5. Once cooked, remove the beef and shred with two forks, discarding excess fat.
6. Strain the cooking liquid and reserve it as the au jus for dipping.
7. Toast the hoagie rolls and fill them with shredded beef and provolone slices.
8. Place the sandwiches under a broiler until the cheese is melted and bubbly.
9. Serve hot with a small bowl of au jus on the side for dipping.
Notes
Use a well-marbled chuck roast for maximum tenderness.
Toasting the rolls helps keep them from getting soggy.
