Ingredients

1.5 lbs beef stew meat

1.5 lbs baby potatoes, halved

4 garlic cloves, minced

4 tbsp butter, melted

1 cup beef broth

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

2 tbsp chopped fresh parsley (optional)


Instructions

1. Heat olive oil in a skillet over medium-high heat. Sear beef in batches until browned on all sides.

2. Transfer seared beef to slow cooker. Add halved baby potatoes, minced garlic, melted butter, beef broth, Italian seasoning, salt, and pepper. Stir to combine.

3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until beef is tender and potatoes are soft.
