Ingredients
600g boneless skinless chicken thighs
120ml honey
80ml soy sauce
4 cloves garlic, minced
60ml ketchup
2 tablespoons rice vinegar
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon sesame seeds (optional)
2 stalks green onions, chopped (optional)
Instructions
1. In a small bowl, whisk together honey, soy sauce, minced garlic, ketchup, and rice vinegar until well combined.
2. Place chicken thighs in an even layer in the slow cooker. Pour the sauce over the chicken, coating evenly.
3. Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours, until the chicken is tender.
4. Remove the chicken from the slow cooker and set aside. In a separate small bowl, stir cornstarch and water into a slurry.
5. Add the slurry to the sauce in the slow cooker and stir well. Set to high and cook for 10 to 15 minutes until thickened.
6. Shred the chicken with two forks and return it to the thickened sauce, stirring to coat.
7. Serve hot, garnished with sesame seeds and green onions if desired.

This recipe is perfect for meal prep and freezes well.
You can use chicken breasts instead of thighs, but reduce cooking time slightly.
