Ingredients
2 slices bread
1 tablespoon butter
3 ounces smoked gouda cheese, sliced
1 small apple, thinly sliced (such as Honeycrisp or Granny Smith)
1 teaspoon Dijon mustard (optional)
Instructions
1. Thinly slice the apple and gouda.
2. If using mustard, spread a thin layer on the inside of each bread slice.
3. Layer half of the gouda, all the apple slices, then the remaining gouda between the bread.
4. Butter the outer sides of the bread.
5. Heat a skillet over medium heat.
6. Cook the sandwich for 3–4 minutes on one side until golden, then flip and cook the other side.
7. Press gently with a spatula while cooking for extra crispness.
8. Once cheese is melted and bread is golden, remove from skillet.
9. Let rest for a minute, slice in half, and serve hot.
