Description

These Smores Cookie Bars are the perfect gooey dessert mashup of graham crackers, melted chocolate, and toasted marshmallows all baked into a chewy cookie bar. Great for parties, holidays, or weeknight cravings. A no-campfire-needed smores dessert bar your family will love!


Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups graham cracker crumbs

1 1/2 cups semi-sweet chocolate chips or chopped chocolate

1 1/2 cups mini marshmallows


Instructions

1. Preheat oven to 350°F. Grease or line a 9×13 inch baking dish with parchment paper.

2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add eggs one at a time, beating well after each. Stir in vanilla extract.

4. In another bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture until combined.

5. Stir in the graham cracker crumbs until fully incorporated.

6. Fold in most of the chocolate chips and marshmallows, reserving a bit of each for topping.

7. Press dough evenly into the prepared pan. Sprinkle reserved chocolate and marshmallows on top.

8. Bake for 20 to 25 minutes until golden around the edges and set in the center.

9. Cool completely before slicing for clean edges.

Notes

This recipe makes about 16 to 20 cookie bars.

You can swap in dark chocolate or peanut butter cups for a fun twist.

Bars freeze well for up to 2 months if individually wrapped.
