Ingredients
1 cup unsalted butter
1 cup creamy peanut butter
1 cup brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Instructions
1. In a large mixing bowl, beat the unsalted butter and creamy peanut butter together until smooth and creamy.
2. Add brown sugar and granulated sugar, and beat until light and fluffy.
3. Crack in the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add the dry mixture to the wet mixture, stirring just until combined.
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Use a cookie scoop to portion dough onto the sheet, leaving space between each.
8. Bake for 8–10 minutes, until the edges are set but the centers look soft and slightly underdone.
9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack.
10. Serve warm or store in an airtight container to maintain softness.
Notes
Cookies will continue to cook slightly after removing from the oven.
Use creamy, no-stir peanut butter for best texture.
Add chocolate chips or flaky salt on top for extra flair.
