Description

Chocolate Strawberry Jam Cupcakes are soft rich chocolate cupcakes filled with sweet strawberry jam and topped with creamy chocolate frosting. This easy homemade dessert blends deep cocoa flavor with fruity strawberry sweetness creating a bakery style treat perfect for parties holidays or everyday baking.


Ingredients

1 1/2 cups all purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup granulated sugar

1 large egg

3/4 cup buttermilk

1/3 cup vegetable oil

1 teaspoon vanilla extract

3/4 cup hot water

1/2 cup strawberry jam

1 1/2 cups chocolate frosting

6 fresh strawberries optional garnish


Instructions

1. Preheat oven to 350°F and line a 12 cup muffin tin with cupcake liners

2. Whisk flour cocoa powder baking soda salt and sugar in a large bowl

3. In another bowl mix egg buttermilk vegetable oil and vanilla extract

4. Pour wet ingredients into dry ingredients and stir until combined

5. Slowly mix in hot water until batter becomes smooth and slightly thin

6. Add one tablespoon of batter into each cupcake liner

7. Place one teaspoon of strawberry jam in the center of each cupcake

8. Cover jam with another tablespoon of batter

9. Bake for 18 to 20 minutes until a toothpick inserted near the edge comes out clean

10. Cool cupcakes completely before frosting

11. Frost cupcakes with chocolate frosting and garnish with strawberries if desired

Notes

Use thick strawberry jam so it stays in the cupcake center during baking

Let cupcakes cool completely before frosting to avoid melting

Add mini chocolate chips to the batter for extra chocolate flavor
