Ingredients
1 cup yellow cornmeal
½ cup all-purpose flour
1½ teaspoons baking powder
½ teaspoon salt
1 teaspoon sugar
1 large egg
¾ cup buttermilk
¼ cup grated onion
Vegetable oil for frying
Instructions
1. In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar until combined.
2. In a separate bowl, beat the egg, then stir in the buttermilk and grated onion.
3. Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
4. Heat 2 inches of vegetable oil in a skillet or Dutch oven to 350°F (175°C).
5. Drop tablespoon-sized scoops of batter into the hot oil in batches, avoiding overcrowding.
6. Fry 2–3 minutes per side until golden brown and cooked through.
7. Remove hush puppies with a slotted spoon and drain on paper towels.
8. Serve immediately while hot and crispy.
Notes
This batter should be thick, not runny, for best frying results.
If desired, add minced jalapeño or shredded cheese for a twist.
Keep oil temperature consistent to avoid greasy or undercooked hush puppies.
