Ingredients
4 cups diced apples
1 1/2 cups brown sugar
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup apple cider
Instructions
1. Peel, core, and finely dice the apples. The finer the dice, the smoother the jam.
2. In a large pot, combine apples, brown sugar, lemon juice, apple cider, cinnamon, cloves, and nutmeg. Let sit for 10 minutes.
3. Bring to a gentle boil over medium heat, stirring often. Lower heat and simmer for 45–60 minutes until thickened.
4. Use a potato masher to adjust consistency as desired.
5. Remove from heat, stir in vanilla extract, and let cool slightly.
6. Transfer to sterilized jars and seal. Store in fridge for up to 3 weeks, or process jars for long-term storage.
