Description

This spicy cheesy garlic butter chicken with linguine in four-cheese sauce is the ultimate comfort dinner. Featuring tender seared chicken, a rich garlic butter base, and a luscious mix of mozzarella, parmesan, fontina, and gorgonzola, this creamy pasta recipe is packed with bold flavor and just the right heat. Perfect for weeknights or dinner parties.

Ingredients

2 chicken breasts

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon crushed red pepper flakes (adjust to taste)

2 tablespoons olive oil

3 tablespoons butter

4 garlic cloves, minced

12 ounces linguine pasta

1 1/2 cups heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup shredded fontina cheese

1/4 cup crumbled gorgonzola cheese

2 tablespoons chopped fresh parsley

Instructions

1. Season both sides of the chicken breasts with salt, pepper, paprika, garlic powder, and red pepper flakes.

2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken until golden and cooked through, about 6–7 minutes per side. Remove and let rest.

3. Cook the linguine in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.

4. In the same skillet, melt remaining butter. Add minced garlic and sauté until fragrant.

5. Pour in heavy cream and stir to combine. Gradually add mozzarella, parmesan, fontina, and gorgonzola. Stir until fully melted and creamy.

6. If needed, thin the sauce with some reserved pasta water until desired consistency is reached.

7. Toss the cooked linguine in the cheese sauce until evenly coated.

8. Slice the rested chicken and layer it over the pasta. Garnish with chopped parsley and a pinch of red pepper flakes if desired.

Notes

This recipe can be made spicier by adding extra red pepper flakes.

You can substitute the cheese blend to suit your taste.

Use freshly shredded cheeses for the best melt and flavor.
