Description
Spicy Chipotle Egg Breakfast Sandwiches are a bold, smoky, and satisfying breakfast made with fluffy eggs, melty cheese, chipotle mayo, and toasted English muffins for an easy spicy breakfast sandwich everyone will love.
Ingredients
8 large eggs
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
3 tablespoons mayonnaise
1 to 2 chipotle peppers in adobo, finely chopped
1 teaspoon adobo sauce
4 slices cheddar cheese
4 slices pepper jack cheese
4 English muffins, split
1 avocado, sliced
1 medium tomato, sliced
4 slices cooked bacon or 4 breakfast sausage patties
2 tablespoons chopped fresh cilantro
Instructions
1. In a small bowl, stir together the mayonnaise, chopped chipotle peppers, and adobo sauce until smooth. Set aside.
2. In another bowl, whisk the eggs with the milk, salt, and black pepper until well combined.
3. Toast the English muffins until lightly golden and set them aside.
4. Melt the butter in a nonstick skillet over medium low heat. Pour in the eggs and cook slowly, stirring gently, until soft curds form and the eggs are just set.
5. Divide the eggs into four portions in the pan and top each portion with cheddar and pepper jack cheese. Cover briefly so the cheese melts.
6. Spread the chipotle mayo over the toasted English muffins.
7. Add the cheesy eggs to the bottom halves, then top with avocado, tomato, bacon or sausage, and cilantro.
8. Close the sandwiches with the top halves of the muffins and serve immediately.
Notes
Use only 1 chipotle pepper for a milder sandwich and add more if you want extra heat.
Cook the eggs over medium low heat so they stay soft and fluffy instead of dry.
Toast the English muffins well so they hold the filling without getting soggy.
