Ingredients
12 oz shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt
1 tbsp lime juice
8 small tortillas, corn or flour
2 cups shredded cabbage or slaw mix
1/2 cup sour cream or Greek yogurt
1 chipotle pepper in adobo sauce
1 tsp honey
2 tbsp chopped fresh cilantro
Extra lime wedges, for serving
Instructions
1. Toss shrimp with olive oil, chili powder, paprika, garlic powder, cumin, salt, and lime juice. Let marinate for 10 minutes.
2. Blend sour cream (or Greek yogurt), chipotle pepper, lime juice, and honey until smooth to make chipotle crema.
3. Heat a skillet over medium-high heat. Sear shrimp for 2 minutes per side until opaque and slightly charred.
4. Warm tortillas in a dry skillet or over a flame until soft and lightly charred.
5. Assemble tacos: start with cabbage, top with shrimp, drizzle with crema, and garnish with cilantro. Serve with lime wedges.
Notes
These tacos are best eaten fresh while shrimp are hot.
Adjust spice by using more or less chipotle in the crema.
Greek yogurt makes a great light substitute for sour cream.
