Ingredients
2 cups strawberries
1 cup blueberries
2 cups green grapes
2 cups red grapes
2 cups pineapple chunks
2 kiwi
2 cups cantaloupe
1 cup mandarin orange segments
2 tablespoons honey
1 tablespoon fresh lime juice
1 teaspoon orange zest
2 tablespoons fresh mint
Instructions
1. Wash and dry all of the fruit well so the salad stays fresh and not watery. Hull and slice the strawberries, cube the cantaloupe, peel and slice the kiwi, and prepare the grapes, pineapple, and mandarin oranges.
2. In a small bowl, whisk together the honey, fresh lime juice, and orange zest until the dressing looks smooth and glossy.
3. Add the strawberries, blueberries, green grapes, red grapes, pineapple, kiwi, cantaloupe, and mandarin oranges to a large serving bowl.
4. Pour the honey citrus dressing over the fruit and toss gently until everything is lightly coated.
5. Sprinkle in the chopped fresh mint and give the salad one more gentle toss.
6. Chill for 20 to 30 minutes before serving for the best flavor and texture.
Notes
Use ripe but firm fruit so the salad keeps its shape after tossing.
Add the mint just before serving if you want the freshest flavor and color.
For the best presentation, cut the fruit into similar bite sized pieces.
