Description

Stick of Butter Chicken Rice is a comforting baked dinner recipe with buttery rice, tender chicken, and savory onion flavor. A one-dish meal perfect for weeknights and family gatherings.


Ingredients

1 cup long-grain white rice

2 cups chicken broth

4 chicken breasts or thighs

1 stick butter

1 packet onion soup mix


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Spread uncooked rice evenly in dish and pour chicken broth over it.

3. Place uncooked chicken on rice and sprinkle onion soup mix over top.

4. Cut butter into pats and distribute evenly over chicken and rice.

5. Cover with foil and bake for 50 minutes, then uncover and bake 10 more minutes until golden and chicken reaches 165°F.

Notes

You can substitute chicken thighs for a juicier result.

Jasmine or basmati rice can be used but avoid instant rice.

Let the dish rest for 5 minutes before serving for best texture.
