Ingredients
1 lb chicken thighs
2 tbsp soy sauce
2 tbsp cornstarch
1 tbsp sesame oil
8 oz noodles
2 tbsp vegetable oil
1 tbsp rice vinegar
2 tbsp brown sugar
1 tbsp sriracha
4 cloves garlic, grated
1 tsp fresh ginger, grated
1/4 cup water
2 green onions, chopped
Instructions
1. Cut the chicken thighs into bite-sized pieces and marinate with 1 tablespoon soy sauce, cornstarch, and sesame oil. Set aside.
2. Cook noodles according to package instructions. Drain and set aside.
3. In a bowl, whisk together remaining soy sauce, brown sugar, rice vinegar, sriracha, garlic, ginger, and water to make the sauce.
4. Heat vegetable oil in a large skillet over medium-high heat. Sear chicken until golden and fully cooked.
5. Pour sauce into the skillet with the chicken and simmer until thick and sticky.
6. Add cooked noodles and toss to coat evenly in the sauce.
7. Top with chopped green onions before serving.
Notes
Use chicken thighs for juicier, more flavorful results.
Add more sriracha if you like it extra spicy.
