Ingredients
115 g cream cheese
70 g powdered sugar
1 tsp vanilla extract
60 g fresh or freeze-dried strawberries (finely chopped or crushed)
170 g white chocolate (for coating)
30 g graham cracker crumbs or freeze-dried strawberry crumbs (for rolling)
Instructions
1. Beat the cream cheese until light and fluffy.
2. Add powdered sugar, vanilla extract, and strawberries. Mix until smooth.
3. Chill the mixture in the freezer for 15 minutes if it’s too soft.
4. Scoop and roll into bite-sized balls. Place on a tray lined with parchment.
5. Freeze the balls until firm, about 15–20 minutes.
6. Melt the white chocolate until smooth and glossy.
7. Dip each ball into melted chocolate, coating fully.
8. Place back on the tray and sprinkle or roll in crumbs while still tacky.
9. Let them set in the fridge until the coating hardens.
10. Store in an airtight container and enjoy chilled.

Chill the cheesecake mixture before shaping to make rolling easier.
Use freeze-dried strawberries for an intense fruity flavor without excess moisture.
Swap white chocolate with dark or milk chocolate for a deeper contrast.
