Description

This Sweet Potato and Sausage Casserole is the perfect hearty one-pan meal for cozy dinners or brunch. Packed with roasted sweet potatoes, savory sausage, onions, herbs, and melty cheese, it’s a family-friendly casserole recipe that’s satisfying, simple, and flavorful. Ingredients

2 large sweet potatoes

1 pound sausage

1 yellow onion

2 tablespoons olive oil

2 garlic cloves

1 tablespoon chopped rosemary or thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded mozzarella or cheddar cheese


Instructions

1. Peel and dice the sweet potatoes into bite-sized cubes. Toss them with olive oil, salt, pepper, and chopped rosemary. Spread on a baking sheet and roast at 400°F for 25 minutes until fork-tender.

2. While the sweet potatoes roast, slice or crumble the sausage and cook it in a skillet over medium heat until browned and fully cooked.

3. Add diced onion and minced garlic to the skillet and cook until the onion softens and begins to caramelize.

4. In a large casserole dish, combine the roasted sweet potatoes with the sausage mixture. Stir everything together well.

5. Sprinkle the shredded cheese evenly over the top.

6. Bake at 375°F for 15–20 minutes until the cheese is melted and slightly golden.

7. Let the casserole rest for 5 minutes before serving.

Notes

Use any sausage you like: spicy, mild, smoked, or even plant-based.
