Description

Sweet Potato Breakfast Boats are a hearty, healthy breakfast made with roasted sweet potatoes, eggs, cheese, and savory toppings for an easy high-protein morning meal that is perfect for brunch, meal prep, or busy weekdays.


Ingredients

4 medium sweet potatoes

1 tablespoon olive oil

4 large eggs

1/2 cup shredded cheddar cheese

1 cup baby spinach

4 strips cooked turkey bacon, chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

2 tablespoons chopped green onions


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Scrub and dry the sweet potatoes, rub them with olive oil, and place them on the prepared baking sheet.

3. Roast the sweet potatoes for 40 to 50 minutes, or until they are fork tender.

4. While the sweet potatoes bake, cook the turkey bacon until crisp and chop it into small pieces.

5. Lightly sauté the baby spinach for 1 to 2 minutes until wilted, then set it aside.

6. In a small bowl, whisk the eggs with salt, black pepper, and garlic powder.

7. Remove the sweet potatoes from the oven and let them cool for a few minutes until safe to handle.

8. Slice each sweet potato lengthwise down the center without cutting all the way through.

9. Gently press the ends to open each potato and fluff the inside with a fork.

10. Divide the spinach and chopped turkey bacon among the sweet potatoes.

11. Carefully spoon the egg mixture into each sweet potato boat.

12. Top each one with shredded cheddar cheese.

13. Return the filled sweet potatoes to the oven and bake for 12 to 15 minutes, until the eggs are set and the cheese is melted.

14. Remove from the oven, sprinkle with chopped green onions, and serve warm.

Notes

Use medium sweet potatoes that are close in size so they cook evenly and hold the filling well.

Do not overfill the boats with egg mixture because the eggs will puff slightly as they bake.

These reheat well in the oven or air fryer, which helps keep the texture better than the microwave.
