Ingredients

3 large carrots

2 crisp apples (such as Honeycrisp or Fuji)

2 tablespoons olive oil

2 tablespoons maple syrup

1 tablespoon Dijon mustard

0.5 teaspoon salt

0.25 teaspoon black pepper

1 teaspoon fresh thyme leaves (optional)


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Peel carrots and slice into sticks or rounds. Core apples and slice into wedges, leaving the skin on.

3. In a bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, and pepper until smooth.

4. Place apples and carrots on the baking sheet, drizzle glaze over them, and toss until well coated.

5. Spread into an even layer and roast for 25–30 minutes, stirring once halfway through.

6. Roast until carrots are tender and caramelized, and apples are soft but still holding shape.
