Description

Ingredients

1 lb ground beef

1 packet taco seasoning

8 small flour tortillas

1 can refried beans

1 cup enchilada sauce

1 ½ cups shredded Mexican cheese blend

2 roma tomatoes, diced

3 green onions, sliced

1 cup vegetable oil for frying


Instructions

1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

2. Add taco seasoning and a splash of water. Stir and simmer for 2–3 minutes until thickened.

3. In a separate pan, heat oil over medium heat. Fry each tortilla until golden and crispy, about 1–2 minutes per side. Drain on paper towels.

4. Lay one fried tortilla on a baking sheet. Spread refried beans, then add a layer of seasoned beef.

5. Place a second fried tortilla on top. Spread enchilada sauce over it and sprinkle with shredded cheese.

6. Broil for 1–2 minutes until cheese is melted and bubbly.

7. Top with diced tomatoes and green onions. Slice into quarters and serve hot.

Notes

This recipe is best served immediately while the tortillas are crisp.

You can make it vegetarian by skipping the beef and doubling the beans.

Homemade taco seasoning adds extra depth—feel free to use your favorite mix.
