Description

This hearty Texas Tamale Pie Casserole is a family-favorite recipe packed with bold Tex-Mex flavor. Made with ground beef, cornbread topping, and cheddar cheese, it’s perfect for easy dinners, potlucks, or meal prep. This easy casserole is freezer-friendly, reheats beautifully, and satisfies big cravings.


Ingredients

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 can (10 oz) diced tomatoes with green chilies

1 can (15 oz) corn, drained

1 ½ cups shredded cheddar cheese

1 box (8.5 oz) cornbread mix

1 large egg

⅓ cup milk


Instructions

1. Brown the ground beef in a large skillet over medium heat.

2. Once halfway cooked, add chopped onion and garlic. Cook until beef is browned and onion is soft.

3. Stir in taco seasoning, diced tomatoes with green chilies, and corn. Simmer for 5 minutes.

4. Preheat oven to 375°F and grease a 9×13-inch baking dish.

5. Pour beef mixture into the dish and smooth it evenly.

6. Sprinkle shredded cheddar cheese on top of the meat layer.

7. In a separate bowl, mix cornbread mix with egg and milk until just combined.

8. Pour cornbread batter over cheese and gently spread it out.

9. Bake uncovered for 25–30 minutes until cornbread is golden and cooked through.

10. Let it cool for 5 minutes before serving.

Notes

This casserole freezes well—perfect for meal prep.

For extra heat, add diced jalapeños to the meat layer.
