These creamy Thanksgiving Cheesy Potatoes are the ultimate holiday side dish. Made with frozen hash browns, cheddar cheese, sour cream, and a crispy topping, this easy casserole is perfect for Thanksgiving and potlucks. Comfort food at its best!
Ingredients
2 pounds frozen shredded hash brown potatoes
2 cups shredded cheddar cheese
1 1/2 cups sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup butter, melted
1/2 cup finely diced onion
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups crushed cornflakes or crackers (optional topping)
3 tablespoons melted butter (for topping)
Instructions
1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine the thawed hash brown potatoes, cheddar cheese, sour cream, cream of chicken soup, diced onion, garlic powder, salt, and pepper. Mix until fully combined.
3. Spread the mixture evenly in the prepared baking dish.
4. In a small bowl, mix the crushed cornflakes or crackers with 3 tablespoons of melted butter. Sprinkle the topping evenly over the potato mixture.
5. Bake uncovered for 45–50 minutes, until the top is golden and the edges are bubbly.
6. Let rest for 5–10 minutes before serving for best texture.
Notes
This recipe can be made up to 24 hours ahead and refrigerated until ready to bake.
For extra richness, add chopped cooked bacon or sautéed mushrooms.
Swap cream of mushroom or celery soup for a vegetarian twist.
