Ingredients

12 oz rigatoni

1 lb boneless chicken breast

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

2 tbsp butter

5 cloves garlic, minced

1 cup heavy cream

1/2 cup grated parmesan cheese

1/2 cup reserved pasta water

2 tbsp chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook rigatoni until just al dente. Reserve 1 cup of pasta water and drain.

2. Season chicken breast with salt and pepper. In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.

3. Lower heat and add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.

4. Pour in heavy cream and bring to a gentle simmer.

5. Stir in grated parmesan and a splash of pasta water. Mix until smooth and creamy.

6. Return cooked chicken to the skillet and stir to coat in the sauce.

7. Add rigatoni to the pan. Toss until evenly coated and heated through.

8. Garnish with chopped parsley if desired and serve hot.

Notes

This dish is best served immediately for maximum creaminess.

You can add spinach, mushrooms, or sun-dried tomatoes for variety.

To reheat, use a splash of cream or milk to loosen the sauce.
