Ingredients
2 large chicken breasts
2 tablespoons butter (plus more for sauce)
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons Cajun seasoning
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 ounces cream cheese
10 ounces rotini pasta
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon chopped parsley (fresh or dried)
Instructions
1. Cut chicken into bite-sized pieces.
2. Heat a skillet over medium-high heat and add 1 tablespoon butter and olive oil.
3. Add chicken to the skillet and season with Cajun seasoning, salt, and pepper.
4. Sear chicken until golden brown and cooked through. Remove and set aside.
5. Cook rotini pasta in salted water until al dente. Drain and reserve 1/4 cup of pasta water.
6. In the same skillet, melt 1 tablespoon of butter and add minced garlic. Sauté until fragrant.
7. Stir in cream cheese and heavy cream. Whisk until smooth.
8. Add Parmesan cheese and more Cajun seasoning to the sauce. Simmer until thickened.
9. Add the cooked pasta to the sauce with reserved water if needed.
10. Toss in the cooked chicken and stir gently to coat evenly.
11. Sprinkle paprika and parsley on top. Serve hot.
Notes
Use freshly grated Parmesan for best melting and flavor.
Reserve pasta water to help thin and emulsify the sauce if needed.
Adjust Cajun seasoning to taste depending on desired spice level.
