Ingredients
1 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
24 large marshmallows
1/2 cup icing or melted white chocolate
decorative candy eyes, mini chocolate chips, colored gel, or sprinkles
Instructions
1. Cream together peanut butter, butter, granulated sugar, and brown sugar until fluffy.
2. Beat in the egg and vanilla extract until combined.
3. In a separate bowl, whisk flour, baking soda, and salt. Add to the wet ingredients and mix into a dough.
4. Preheat oven to 350°F (175°C). Roll dough into tablespoon-sized balls and place on a parchment-lined baking sheet.
5. Bake for 8–10 minutes until edges are golden.
6. While warm, press a marshmallow in the center of each cookie and let cool completely.
7. Drizzle icing or melted white chocolate around the marshmallow to create a “melted snow” look.
8. Decorate with candy eyes, gel, and sprinkles to create snowman faces and buttons.
9. Let decorations set before serving or storing.

Use classic creamy peanut butter for best texture—not natural peanut butter.
