Ingredients
1 can (20 oz) crushed pineapple with juice
1 box (3.4 oz) instant pistachio pudding mix
1 ½ cups mini marshmallows
1 tub (8 oz) whipped topping, thawed
½ cup chopped pecans
10 maraschino cherries, halved (for garnish)
¼ cup roasted pistachios (for garnish)
Instructions
1. In a large bowl, combine the crushed pineapple with its juice and the pistachio pudding mix. Stir until well combined and slightly thickened.
2. Gently mix in the mini marshmallows and chopped pecans.
3. Fold in the whipped topping until the mixture is fluffy and fully combined.
4. Cover the bowl and refrigerate for at least 1 hour to chill and allow the flavors to meld.
5. Before serving, garnish with halved maraschino cherries and roasted pistachios. Serve chilled.
Notes
This salad is best served cold after chilling for at least one hour.
You can swap pecans with walnuts or almonds if you prefer a different crunch.
For a lighter version, use sugar-free pudding mix and lite whipped topping.
