Description

This Turkey Noodle Soup is the ultimate comfort food made with tender turkey, egg noodles, and aromatic vegetables simmered in savory broth. A perfect post-holiday or cozy weeknight dinner, this easy turkey soup is wholesome, satisfying, and family-approved.


Ingredients

2 cups cooked turkey, shredded

6 cups chicken or turkey broth

2 cups egg noodles, uncooked

1 cup carrots, sliced

1 cup celery, sliced

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 bay leaves

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.

3. Stir in minced garlic and cook for 1 minute until fragrant.

4. Pour in the broth and add bay leaves, salt, and pepper.

5. Bring to a boil, then reduce to a simmer for 10 minutes.

6. Stir in cooked turkey and uncooked egg noodles.

7. Cook until noodles are tender, about 8–10 minutes.

8. Remove bay leaves and stir in fresh parsley.

9. Taste and adjust seasoning before serving.

Notes

This soup freezes best without the noodles added.

You can swap egg noodles for rotini, shells, or spaghetti.

Use leftover roast turkey for added depth of flavor.
