Description

Tuscan Chicken Pasta is a creamy one-pan dinner made with tender chicken, sun-dried tomatoes, spinach, and a garlic parmesan sauce tossed with pasta. This easy Tuscan chicken recipe is perfect for busy weeknights or elegant dinners, delivering bold Italian flavor with every bite.


Ingredients

2 chicken breasts

8 oz pasta (penne or rotini recommended)

1 cup sun-dried tomatoes (drained and chopped)

3 cups fresh spinach

3 garlic cloves (minced)

1 cup heavy cream

1 cup grated parmesan cheese

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning


Instructions

1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook for 5–7 minutes per side until golden and fully cooked. Remove and set aside.

2. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.

3. Pour in heavy cream, scraping any browned bits from the skillet. Simmer for 3–4 minutes. Stir in grated parmesan cheese until smooth.

4. Add cooked pasta and spinach to the skillet. Toss gently to coat. Spinach will wilt into the sauce.

5. Slice the chicken and return it to the skillet. Let it warm through, stirring gently.

6. Taste and adjust seasonings. Serve hot with extra parmesan and cracked black pepper if desired.

Notes

This dish is best with short pasta shapes that hold the sauce.

Slightly undercook pasta if making ahead to avoid sogginess when reheating.

Add a splash of chicken broth or cream when reheating to loosen the sauce.
