Ingredients

1 lb chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 tablespoon Italian seasoning

4 garlic cloves, minced

1 teaspoon salt

1/2 teaspoon black pepper

8 oz penne or fettuccine pasta

1/2 cup sun-dried tomatoes, sliced

1 tablespoon butter

1 tablespoon Cajun seasoning

1 cup heavy cream

1/2 cup chicken broth

3/4 cup grated Parmesan cheese

1 cup fresh spinach (optional)


Instructions

1. Cut chicken breast into small pieces and toss with olive oil, Italian seasoning, garlic, salt, and pepper.

2. Sear the chicken in a hot skillet until golden and cooked through. Remove and set aside.

3. Cook pasta until al dente. Reserve 1 cup of pasta water and drain.

4. In the same skillet, melt butter. Add garlic (optional), Cajun seasoning, and sun-dried tomatoes.

5. Pour in heavy cream and chicken broth. Let simmer until slightly reduced.

6. Stir in Parmesan cheese until melted and smooth.

7. Add cooked chicken and pasta back into the skillet. Use pasta water to loosen if needed.

8. Stir in spinach and let wilt.

9. Serve hot, topped with extra Parmesan or Cajun seasoning if desired.

Notes

Let sauce simmer to thicken slightly before adding cheese.

For extra spice, increase Cajun seasoning or add red pepper flakes.

Substitute shrimp for chicken for a seafood twist.
