Ingredients

2 boneless skinless chicken breasts

2 cups cremini mushrooms, sliced

2 tablespoons butter

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons olive oil

12 oz fettuccine pasta

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear until golden and cooked through. Remove and set aside.

2. In the same skillet, melt butter. Add mushrooms and sauté until browned and moisture evaporates. Stir in garlic and cook for 1 minute.

3. Pour in heavy cream, simmer gently. Add Parmesan cheese, whisk until sauce is smooth and thickened.

4. Cook fettuccine in salted boiling water until al dente. Reserve ½ cup pasta water, then drain.

5. Return chicken to skillet. Add pasta and toss to combine. Use reserved pasta water to adjust sauce if needed.

6. Garnish with fresh parsley and extra Parmesan before serving. Serve hot.
