Ingredients
2 boneless skinless chicken breasts
3 tablespoons olive oil
2 tablespoons lemon juice
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
12 ounces pasta of choice (fettuccine or penne)
2 tablespoons butter
1 cup heavy cream
1 cup grated Parmesan cheese
1/4 cup crumbled feta cheese (optional)
3 cups broccoli florets
1/3 cup breadcrumbs
Instructions
1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for 30 minutes or up to 2 hours in the refrigerator.
2. Preheat oven to 425°F. Toss broccoli with olive oil, breadcrumbs, and grated Parmesan. Roast on a baking sheet for 20–25 minutes, flipping halfway.
3. Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.
4. Sear marinated chicken in a hot skillet until golden and cooked through, 5–7 minutes per side. Slice into strips.
5. In the same skillet, melt butter and sauté garlic briefly. Add cream and simmer for 2–3 minutes. Stir in Parmesan and optional feta until smooth.
6. Add cooked pasta and sliced chicken to the sauce. Thin with reserved pasta water if needed. Mix until evenly coated.
7. Plate the pasta and top with crispy Parmesan broccoli. Garnish with extra Parmesan or lemon zest if desired.
Notes
This dish tastes best when served fresh and hot.
To enhance the Greek flavor, try stirring in extra feta or lemon zest.
Broccoli is best roasted until golden to provide a perfect texture contrast.
