Ingredients

2 chicken breasts

2 teaspoons Greek chili seasoning

2 tablespoons olive oil

12 ounces fettuccine pasta

4 ounces smoked feta cheese

1 cup heavy cream

3 garlic cloves, minced

1 pound fresh asparagus

1/3 cup Parmesan cheese, grated

Salt, to taste

Pepper, to taste


Instructions

1. Pat chicken breasts dry and season with Greek chili seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden and cooked through. Rest before slicing.

3. Preheat oven to 400°F (200°C). Arrange asparagus on a baking sheet, drizzle with olive oil, season with salt and pepper, and sprinkle with Parmesan. Roast 12–15 minutes.

4. Cook fettuccine in salted boiling water until al dente, reserving 1 cup pasta water. Drain.

5. In the chicken skillet, sauté minced garlic. Add heavy cream and stir. Crumble in smoked feta and stir until melted and smooth.

6. Add pasta and sliced chicken to the sauce. Toss gently, adding pasta water if needed.

7. Serve with roasted Parmesan asparagus on the side.

Notes

Use freshly grated Parmesan for the asparagus to get the best melt and crisp.

Reserve pasta water — it’s the secret to silky sauce.

Don’t overcook the asparagus; keep it tender-crisp for the best texture.
