Ingredients
2 large chicken breasts or thighs, thinly sliced
2 cups cooked wild rice
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 medium carrot, sliced thin
1 cup snap peas
1/2 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons sesame oil
Instructions
1. Cook the wild rice according to package instructions and set aside.
2. In a small saucepan, combine soy sauce, brown sugar, garlic, and ginger. Simmer gently.
3. Mix cornstarch with water and whisk into the sauce until thickened. Remove from heat.
4. Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken slices and cook until golden and cooked through. Remove to a plate.
5. In the same skillet, add more sesame oil if needed. Stir-fry bell peppers, broccoli, carrots, and snap peas for 3–4 minutes until tender-crisp.
6. Return chicken to the skillet, pour over teriyaki sauce, and toss until everything is coated and heated through.
7. Serve hot over wild rice and enjoy.
