Ingredients
12 oz linguine
1 lb chicken breast or thighs
2 tbsp Cajun seasoning
8 oz Velveeta cheese, cubed
1 cup heavy cream
2 tbsp butter
3 cloves garlic, minced
1 small onion, finely chopped
1/4 cup Parmesan cheese, grated
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Season chicken with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil over medium and cook chicken until golden and cooked through. Slice into bite-sized pieces and set aside.
2. Cook linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
3. In the same skillet, melt butter and sauté chopped onion until translucent. Add garlic and cook until fragrant.
4. Stir in heavy cream over low heat. Once warmed, add Velveeta cubes and stir until melted and smooth.
5. Return sliced chicken and drained linguine to the skillet. Toss to coat evenly in the sauce. Add reserved pasta water if needed to thin.
6. Stir in Parmesan cheese. Taste and adjust seasoning or add more Cajun spice. Serve hot.
Notes
Velveeta melts quickly, so stir gently to avoid breaking the sauce.
Use rotisserie chicken for a faster shortcut version.
