Ingredients
2 cups penne pasta
2 large chicken breasts, diced
1 1⁄2 cups Velveeta cheese, cubed
1 1⁄2 cups shredded mozzarella cheese
1 1⁄2 cups heavy cream
4 cloves garlic, minced
2 tablespoons butter
1 teaspoon Italian seasoning
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook penne until al dente. Drain and set aside, reserving some pasta water.
2. In a large skillet, melt butter over medium heat. Season diced chicken with salt, pepper, and Italian seasoning.
3. Cook chicken in the skillet until golden and cooked through. Remove and set aside.
4. Add a little more butter to the skillet and sauté the minced garlic until fragrant.
5. Pour in heavy cream and stir. Add Velveeta cubes and stir until fully melted.
6. Add shredded mozzarella and stir until smooth and combined.
7. Return cooked chicken and penne to the skillet and toss to coat evenly.
8. Add a splash of reserved pasta water to loosen sauce if needed.
9. For a bubbly baked top, transfer mixture to a baking dish, top with more mozzarella, and broil for 2–3 minutes until golden.
Notes
This pasta dish tastes best served fresh but can be stored for up to 3 days.
If reheating, add a splash of cream or milk to restore creaminess.
You can add vegetables like spinach or mushrooms for extra flavor and texture.
