Ingredients
1 cup chopped apples
2 tablespoons brown sugar
1 tablespoon butter (for apple filling)
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
1/2 cup unsalted butter (softened)
1/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: extra granulated sugar and cinnamon for topping
Instructions
1. In a skillet over medium heat, melt 1 tablespoon butter and add chopped apples.
2. Stir in 2 tablespoons brown sugar, cinnamon, and nutmeg. Cook until apples soften and caramelize. Let cool.
3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
4. Mix in egg and vanilla extract.
5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
6. Gradually combine the dry ingredients with the wet mixture to form a soft dough.
7. Scoop dough onto a lined baking sheet and slightly flatten each one.
8. Create a small well in the center of each cookie and fill with cooled apple mixture.
9. Bake at 350°F (175°C) for 10–12 minutes until edges are golden brown.
10. Let cool on wire rack and sprinkle with extra sugar or cinnamon if desired.
Notes
Let apple filling cool completely before adding to cookie dough.
Do not overbake — they’ll continue to cook slightly on the baking sheet.
Reheat cookies for 10 seconds in microwave to enjoy them warm again.
