This Warming Cauliflower Chicken Soup is a creamy, comforting and healthy chicken soup recipe made with blended cauliflower, tender shredded chicken, garlic, and lemon juice. Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups cauliflower florets
4 cups chicken broth
2 cups cooked shredded chicken
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh thyme or parsley (optional)
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add chopped onion and cook until soft and translucent, about 5 minutes.
2. Stir in the minced garlic and cook for 1 minute, until fragrant.
3. Add cauliflower florets and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes until cauliflower is tender.
4. Blend the soup using an immersion blender until smooth, or transfer to a blender in batches.
5. Stir in shredded chicken and heat for 5 more minutes. Adjust consistency with additional broth if needed.
6. Add lemon juice, salt, and pepper to taste. Finish with chopped thyme or parsley if using. Serve hot.
Notes
This soup thickens as it cools—add more broth when reheating if desired.
You can use frozen cauliflower florets instead of fresh.
Rotisserie chicken makes this even quicker to prepare.
