Description

This Weeknight Garlic Butter Rotini with Beef, Italian Sausage and Spinach is a quick, comforting pasta dinner packed with bold flavor. Made with garlic butter, ground beef, sausage, and fresh spinach, this one-pan meal is perfect for busy nights. Family-friendly, hearty, and ready in under 30 minutes!


Ingredients

16 oz rotini pasta

1/2 lb ground beef

1/2 lb Italian sausage (mild or hot)

4 cups fresh spinach

4 cloves garlic, minced

4 tbsp butter

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/3 cup grated Parmesan cheese (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook rotini until al dente according to package directions. Reserve 1/2 cup of pasta water, then drain and set aside.

2. In a large skillet over medium heat, heat olive oil. Add ground beef and Italian sausage. Cook until browned and cooked through, breaking it up with a spoon. Drain excess fat.

3. Reduce heat to low, add butter and minced garlic. Sauté for 1-2 minutes until garlic is fragrant and lightly golden.

4. Add spinach to the skillet and cook until wilted, about 2-3 minutes. Use reserved pasta water as needed to help wilt and blend flavors.

5. Add cooked rotini to the skillet. Toss well to coat in garlic butter and meat mixture. Season with salt and pepper. Sprinkle with Parmesan if desired and serve warm.

Notes

Spinach cooks down quickly, so don’t be afraid to add a generous handful.

You can use either mild or hot Italian sausage based on your spice preference.

Parmesan cheese is optional but adds a nice salty finish to the dish.
