Description

White Chocolate Coconut Blondies are chewy dessert bars loaded with buttery white chocolate and sweetened shredded coconut. These easy-to-make blondies are the perfect treat for coconut lovers and a unique twist on classic brownies. Great for bake sales, potlucks, or cozy nights in.


Ingredients

1/2 cup butter

1 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup sweetened shredded coconut

3/4 cup chopped white chocolate or white chocolate chips


Instructions

1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a large microwave-safe bowl, melt the butter, then stir in the brown sugar until smooth and slightly cooled.

3. Add the eggs and vanilla extract, mixing until the mixture is well blended.

4. Stir in the flour, baking powder, and salt until just combined.

5. Fold in the shredded coconut and chopped white chocolate.

6. Spread the batter evenly into the prepared pan and smooth the top.

7. Bake for 25 to 30 minutes or until the top is golden and a toothpick comes out with moist crumbs.

8. Allow to cool in the pan before lifting out and slicing into bars.

Notes

For best flavor, use chopped white chocolate bars instead of chips.

Chill in the fridge before slicing for cleaner cuts.

These blondies freeze well for up to 2 months.
