Description
These Zucchini Cheese Bites are the perfect healthy snack or party appetizer. Made with shredded zucchini, cheddar cheese, and simple pantry ingredients, they’re gluten-free, oven-baked, and kid-friendly. Great for meal prep or dipping in marinara!
Ingredients
1 cup shredded zucchini
1 cup shredded cheddar cheese
1 large egg
1/3 cup breadcrumbs
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Grate the zucchini and squeeze out as much moisture as possible using a towel or cheesecloth.
3. In a bowl, combine zucchini, cheese, egg, breadcrumbs, garlic powder, salt, and pepper. Mix well.
4. Form the mixture into small balls or patties using your hands or a small scoop.
5. Place on the prepared baking sheet and bake for 18–20 minutes, flipping halfway through, until golden brown and crisp on the edges.
6. Serve warm with marinara or your favorite dip.
Notes
These bites are best served warm for the crispiest edges.
You can freeze leftovers and reheat them straight from the freezer.
Try swapping cheddar for mozzarella or Parmesan for a different cheesy flavor.
