Description

Biscoff Tiramisu Cups are an easy no-bake dessert made with Biscoff cookies, mascarpone cream, cookie butter, and espresso for a rich layered treat that is perfect for parties, holidays, or make-ahead entertaining.


Ingredients

250 g mascarpone cheese

240 ml heavy whipping cream

60 g powdered sugar

1 tsp vanilla extract

80 g Biscoff spread

180 ml cooled espresso or strong brewed coffee

24 Biscoff cookies

1 tbsp unsweetened cocoa powder

2 tbsp crushed Biscoff cookies for garnish


Instructions

1. In a large mixing bowl, beat the mascarpone, powdered sugar, vanilla extract, and Biscoff spread until smooth and creamy.

2. In a separate bowl, whip the heavy cream until soft peaks form.

3. Gently fold the whipped cream into the mascarpone mixture until the filling looks light and fluffy.

4. Pour the cooled espresso or strong brewed coffee into a shallow bowl.

5. Dip each Biscoff cookie quickly into the coffee so it softens slightly without falling apart.

6. Add a layer of dipped cookies to the bottom of each dessert cup, breaking the cookies as needed to fit.

7. Spoon or pipe a layer of the mascarpone filling over the cookies.

8. Repeat the layers of dipped cookies and filling until the cups are filled, finishing with cream on top.

9. Cover and chill the cups in the refrigerator for at least 4 hours, or overnight for the best texture.

10. Dust the tops with cocoa powder and sprinkle with crushed Biscoff cookies just before serving.

Notes

These cups taste even better after an overnight chill because the cookie layers soften beautifully and the flavors settle together.

Dip the Biscoff cookies very quickly in the coffee so they stay tender instead of turning mushy.

For a cleaner presentation, pipe the mascarpone filling into the cups instead of spooning it in.
