Description

Brown Sugar Cinnamon Caramel Cookies are soft, chewy cookies made with rich brown sugar, warm cinnamon, and gooey caramel for a cozy homemade dessert that tastes bakery-style and perfect for holidays, cookie trays, or everyday baking.


Ingredients

1 cup unsalted butter, softened

1 1/4 cups light brown sugar, packed

1/4 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1 cup soft caramel candies, chopped

2 tablespoons cinnamon sugar


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the eggs one at a time, then mix in the vanilla extract until smooth.

4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

5. Gradually add the dry ingredients to the wet ingredients and mix just until combined.

6. Fold in the chopped caramel pieces evenly throughout the dough.

7. Chill the dough for 30 minutes so the cookies bake up thick and chewy.

8. Scoop the dough onto the prepared baking sheets, leaving space between each cookie.

9. Sprinkle the tops lightly with cinnamon sugar.

10. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers still look soft.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

Notes

Chilling the dough helps keep the cookies thick and prevents the caramel from spreading too much.

Use soft caramel candies cut into small pieces so they melt evenly into the cookies.

For an extra cozy finish, add a tiny pinch of flaky salt on top after baking.
