Ingredients
2 cups cooked shredded chicken
2 cups cooked pulled pork
4 cups chicken broth
1 can (28 oz) crushed tomatoes
2 tablespoons tomato paste
1 cup BBQ sauce
1 medium yellow onion, chopped
3 cloves garlic, minced
1 1/2 cups corn kernels (fresh, canned, or frozen)
1 1/2 cups lima beans or butter beans (cooked or canned)
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce (or to taste)
Salt and pepper to taste
1 tablespoon vegetable oil (for sautéing)
Instructions
1. In a large stockpot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
2. Add the minced garlic and cook for another minute until fragrant.
3. Stir in crushed tomatoes, tomato paste, BBQ sauce, Worcestershire sauce, and chicken broth. Simmer for 10 minutes.
4. Add the shredded chicken, pulled pork, corn, and lima beans. Stir to combine and bring back to a gentle simmer.
5. Simmer the stew uncovered for at least 30 minutes, stirring occasionally. The longer it simmers, the deeper the flavor.
6. Season with hot sauce, salt, and pepper to taste. Adjust BBQ sauce if more sweetness or smoke is desired.
