Ingredients
2 pounds potatoes
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons Cajun seasoning
3 tablespoons butter
4 cups chicken or vegetable broth
1 cup heavy cream
1 cup shredded cheddar cheese
2 stalks green onions, sliced
salt and pepper to taste
Instructions
1. Melt butter in a large pot over medium heat. Add chopped onions and garlic and cook until translucent, about 5 minutes.
2. Stir in Cajun seasoning and diced potatoes. Cook for another 3 to 4 minutes to coat everything in flavor.
3. Pour in the broth and bring to a boil. Reduce to a simmer and cook until the potatoes are fork-tender, around 15 to 20 minutes.
4. Partially blend the soup with an immersion blender or mash with a potato masher, leaving some chunks for texture.
5. Stir in heavy cream and cheddar cheese. Simmer until cheese is fully melted and soup is creamy.
6. Taste and adjust salt and pepper.
7. Serve hot, garnished with green onions and extra cheese if desired.
Notes
Let the soup rest a few minutes before serving to allow flavors to deepen.
For extra protein, stir in cooked sausage or bacon.
Add more broth or cream if reheating to thin it to your liking.
