Description

Carrot Cake Cheesecake Bars are a rich and creamy dessert made with spiced carrot cake, smooth cheesecake filling, shredded carrots, cream cheese, cinnamon, and vanilla for an easy spring dessert that is perfect for Easter, holidays, or anytime you want a soft and flavorful homemade treat.


Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups finely shredded carrots

8 ounces cream cheese, softened

1/3 cup granulated sugar

1 large egg

1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.

3. In a large bowl, whisk together the brown sugar, 1/4 cup granulated sugar, eggs, vegetable oil, and 1 teaspoon vanilla extract until smooth.

4. Stir the shredded carrots into the wet mixture.

5. Fold the dry ingredients into the wet ingredients just until combined.

6. Spread the carrot cake batter evenly into the prepared pan.

7. In another bowl, beat the softened cream cheese with 1/3 cup granulated sugar until smooth.

8. Add the egg and 1/2 teaspoon vanilla extract to the cream cheese mixture and mix until creamy.

9. Spread the cheesecake layer over the carrot cake batter.

10. Lightly swirl the top with a knife if you want a marbled effect.

11. Bake for 32 to 38 minutes, until the edges are set and the center is slightly jiggly.

12. Cool completely, then chill for at least 3 hours before slicing into bars.

Notes

For the best texture, use freshly shredded carrots instead of pre-shredded ones because they are softer and add more moisture.

Make sure the cream cheese is fully softened before mixing so the cheesecake layer turns out smooth and creamy.

Chilling the bars before slicing is essential if you want clean edges and the perfect cheesecake texture.
