Description

Cherry Cobbler Muffins are soft, buttery muffins filled with juicy cherries and topped with a sweet crumb that tastes just like cherry cobbler in muffin form. This easy cherry muffin recipe is perfect for breakfast, brunch, dessert, or a sweet snack, and it brings together the cozy flavor of homemade cobbler with the convenience of a simple muffin recipe.

Ingredients

2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

2 large eggs

3/4 cup milk

1 teaspoon vanilla extract

1 1/2 cups chopped cherries

1/3 cup brown sugar

1/4 cup all-purpose flour

3 tablespoons cold unsalted butter

Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners or grease the cups lightly.

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

3. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and stir gently just until combined.

5. Fold in the chopped cherries carefully so they are evenly distributed through the batter.

6. In a small bowl, mix the brown sugar and flour for the topping, then cut in the cold butter until crumbly.

7. Divide the batter evenly among the muffin cups, filling each about three quarters full.

8. Sprinkle the crumb topping evenly over each muffin.

9. Bake for 20 to 24 minutes, or until the tops are golden and a toothpick inserted in the center comes out mostly clean.

10. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Fresh, frozen, or canned cherries can all work, but frozen and canned cherries should be thawed or drained well before adding to the batter.

Do not overmix the batter, because a gentle mix helps keep the muffins soft and tender.

For the best cobbler-style finish, keep the topping butter cold so the crumb stays crisp and buttery while baking.
