Ingredients
2 cups cooked shredded chicken
3 cups cooked rice
2 cups red enchilada sauce
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup black beans, drained and rinsed
1 cup corn kernels
1/2 cup diced onion
1 can diced green chiles
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh cilantro
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, combine the cooked shredded chicken, cooked rice, enchilada sauce, sour cream, black beans, corn, diced onion, diced green chiles, garlic powder, ground cumin, chili powder, salt, and black pepper.
3. Stir until the mixture is evenly combined and everything is well coated.
4. Fold in 1/2 cup of the cheddar cheese and 1/2 cup of the Monterey Jack cheese.
5. Spread the mixture evenly into the prepared baking dish.
6. Sprinkle the remaining cheddar cheese and Monterey Jack cheese over the top.
7. Bake uncovered for 25 to 30 minutes, until hot and bubbly and the cheese is fully melted.
8. Let the casserole rest for 5 to 10 minutes before serving.
9. Top with chopped fresh cilantro and serve warm.
