Ingredients
9 lasagna noodles
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups milk
1 cup chicken broth
3 cups cooked shredded chicken
1 cup ricotta cheese
3 cups shredded mozzarella cheese, divided
3/4 cup grated Parmesan cheese, divided
2 cups fresh spinach, chopped
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. Cook the lasagna noodles in salted water until just tender, then drain and set aside.
3. Heat the olive oil and butter in a large skillet over medium heat, then add the garlic and cook for about 30 seconds.
4. Stir in the flour and cook for 1 minute, whisking constantly.
5. Slowly pour in the milk and chicken broth, whisking until the sauce is smooth and slightly thickened.
6. Add the shredded chicken, ricotta cheese, spinach, Italian seasoning, salt, black pepper, 1 1/2 cups mozzarella, and 1/2 cup Parmesan. Stir until creamy and well combined.
7. Spread a thin layer of the chicken mixture in the bottom of the baking dish.
8. Add a layer of lasagna noodles, then spread more chicken mixture on top. Repeat the layers until everything is used.
9. Finish with the remaining mozzarella and Parmesan over the top.
10. Cover loosely with foil and bake for 25 minutes.
11. Remove the foil and bake for another 10 to 15 minutes, until the cheese is melted and lightly golden.
12. Let the lasagna rest for 10 to 15 minutes, then garnish with parsley and serve.
Notes
This recipe works beautifully with rotisserie chicken, which makes prep much faster and adds great flavor.
Letting the lasagna rest before slicing helps the layers stay neat and makes serving easier.
You can assemble it ahead of time, cover it tightly, and refrigerate it for up to 24 hours before baking.
